THE PATTY: Why settle for flavourless patties that taste like nothing

like breadcrumbs, exotic spices, herbs, even onions. It tastes like fine grilled
steak (but comes without the sticker shock) and yet it uses common cuts
of meat from the grocery store: a 50-50 combo of ground boneless short
rib and veal. The short rib gives it a rich steak taste and a gorgeous aroma
on grilling, while the veal adds tenderness. Dijon mustard and a splash of
hearty red wine enhance the beef flavour.
