When summer comes, there’s no rest for the barbecue — food just never tastes as good as when
it’s cooked outdoors with friends. For a menu that’s light yet satisfying after a long day of canoeing
or hiking, look to countries on the shores of the Mediterranean, from Greece to Turkey. Their
tradition of grilling meats and fish infused with fresh herbs, tangy lemon and healthy olive oil and
garlic makes for meals that are simple and served right from the grill. Refreshing cold tomato
soup gets a twist from ripe tomatoes smoked over wood chips. Juicy chicken kebabs pair with
